Unlike other types of fish, herring is not cooked or baked, and you can impossibly use a knife and fork; you have it raw and hold it by its tail. If you still want to try it, you can order a Hollandse Nieuwe (‘The Dutch New’) at a street stall or at any fish restaurant. Don’t forget the onions and sweet and sour pickles before you let the fish slide into your mouth. By the way, you shouldn’t make a habit of that crazy use.
